Zone Low-GI, Matched Carb/Pro Italian Tuna Salad





20 0z Chunk White Tuna

4 TSP Olive Oil

2 TSP Balsamic Vinegar

1 Cup Cherry Tomato

1/2 Cup Artichoke Hearts

1/2 Finely Chopped Red Onion

Juice of 1/4 lemon

TBSP Capers

10 Dried Black Olives

Chopped Dill to taste

Salt, Pepper to taste

2 cups (Dry) Whole Wheat Rotella Pasta

Combine all ingredients in a mixing bowl. Enjoy. To make this paleo, omit the pasta and make up the missing carb blocks (about 110 g carbs)
